Almond Biscotti
250g plain flour
1 tsp baking powder
pinch of salt
150g sugar
2 eggs beaten
finely grated rind of 1 orange
100g whole blanched almonds lightly toasted
sift the flour, baking powder and salt into a bowl. add the sugar, eggs and orange rind and mix to a dough, then knead in the almonds
using your hands, roll the dough into a ball, cut in half and roll each portion into a log about 4cm in diameter. place on a baking sheet lightly dusted with flour and bake in preheated oven, 180c for 10 minutes. remove from the oven and cool for 5 minutes.
using a serrated knife, cut the logs into 1 cm thick siagonal slices on the baking sheet and return to the oven for 15 minutes or until slightly golden. transfer to a wire rack to cool and crisp up.
